We have another delicious recipe here for you from our fantastic Food Services Manager, Tina! This one is a recipe for her favourite salad. This would make for a great #meatlessmonday meal or as a side for your family’s lunch or dinner.

Simple Spinach Salad with Tamari-Nooch Dressing

If you haven’t tried nutritional yeast yet you are missing out.  Nutritional yeast (or as some say “nooch”) is an inactive yeast made from sugarcane and beet molasses.  It has a nutty, cheesy flavour and is used to emulate cheese in vegan dishes.  It is a source of complete protein and vitamins, in particular B-complex vitamins. It contains folates, thiamine, riboflavin, niacin, selenium and zinc, making it a great superfood! It’s low in sodium and fat, gluten-free, and doesn’t contain any added sugars or preservatives.  I love this dressing…I could drink it on its own.

Tamari-Nooch Dressing

  • 3/4 cup nutritional yeast
  • 1/3 cup water
  • 1/3 cup tamari
  • 1/3 cup apple cider vinegar
  • 2 garlic cloves
  • 1 cup oil

Blend!!

Drizzle over baby spinach and/or kale.  Garnish with slivered red onions, hemp seeds and croutons.
