Food Services Manager, Carter (Gnome), is back to share a fun summer recipe to help beat the heat!

Watermelon, Feta, and Arugula Salad with Balsamic Vinegar

Ingredients

  • 4 ounces arugula
  • ¼ watermelon, seeds and rind removed, cut into 1 inch cubes
  • 6 ounces of feta cheese, cut into ½ inch cubes
  • ½ red onion thinly sliced
  • ¼ cup fresh basil, thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Course Salt
  • Black Pepper

Method

Combine all ingredients into a large bowl and gently fold them together.
