A Classic French Recipe from the CK Kitchen
Croque Monsieur
Quick and easy to prepare, this French bistro classic is a hit with kids and adults. Serve with a green salad and open a bottle of wine. Bon appétit!
- 80 g (3 oz) butter
- 1 tablespoon all purpose flour
- 185 ml (3/4 cup) milk
- ½ teaspoon Dijon mustard
- 1 egg yolk
- Pinch of nutmeg
- 12 slices of bread
- 6 slices ham
- 130 g (1 cup) grated Gruyère cheese
Melt 20g (3/4oz) of the butter in a saucepan, add the flour and stir over low heat for 3 minutes. Slowly add the milk and mustard, whisking constantly. Simmer until the mixture has thickened and reduced by about a third. Remove from heat and stir in the egg yolk. Season with salt, pepper and nutmeg and leave to cool completely.
Place half of the bread slices on a baking tray. Top each piece of bread with a slice of ham, then with some of the sauce, then some of the cheese, and finally with another piece of bread. Melt half the remaining butter in a large frying pan and fry the sandwiches on both sides until they are golden brown. Add remaining butter when you need it. Cut each sandwich in half and serve.
